Spice Cauliflower and Potatoes – Crockpot

Found this in the Indian Slow Cooker book

Ingredients

  • 1 med/small cauliflower head (cut into 1 inch pieces)
  • 1 large potato, chopped
  • Onions, raw, 1/2 cup to 3/5 cup, chopped
  • Serrano Peppers, 1.5 pepper
  • Canola oil,1.5 tbsp
  • Cumin seed, 0.5 tbsp
  • Salt, 0.5 tbsp
  • Garlic, 3 cloves
  • Ginger, peeled and grated, 1-3 tbsp
  • Turmeric, ground, 0.5 tsp
  • Pepper, red or cayenne, 0.5 tbsp

Preparation

  1. Put spices and oil into the crock pot and stir together
  2. Add potato, onion and pepper to the spice mixture and toss to coat
  3. Toss cauliflower in with the mixture
  4. Cook for 3 hours on low. Stir twice in the first hour.

I didn’t cut the serrano peppers when i cut the recipe in half per the instructions, so this bad boy was super hot with a full 3 serranos, and i also cooked it on high for three hours instead of low and it came out just fine, even a little char!
