Quinoa Salad

My MIL went to a local coffee shop/small restaurant and found a salad that she really liked, and challenged me to re-create it.

I’m not sure i recreated it, but i did make something pretty darn tasty! So we will call this quinoa salad – attempt #1

Ingredients:

  • 2 cups cooked quinoa
  • 1 tbl blood orange EVOO (or other citrus flavor)
  • 1 tbl Cider Vinegar
  • 2 tsp honey
  • 1/2 tsp lime juice
  • 1/2 tsp thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbl chopped almonds
  • 2 tbl chopped dried cranberries

Preparation:

Combine all ingredients. Allow to sit for 1 hour, to overnight for flavors to properly meld.
