Found this in RR i think.. I can’t say it was awesome, but it might have been because i used the whole can of chick peas vs the 1/2 cup the recipe looked for. Interesting flavor, might be a bit better if they sat a little more got a little softer.
Lemony Chickpea Salad
Whisk together 1 teaspoon olive oil, 2 teaspoons lemon juice, 1/2 teaspoon lemon zest, 1/8 teaspoon Dijon mustard, and 2 teaspoons chopped fresh chives. Toss with 1/2 cup drained and rinsed canned chickpeas.
