This is another recipe from a magazine that seems to have been around since 2011.
It looked good, too good to be true actually.
The dough was hard to work with and shapes didn’t hold at 1/8 inch thick.
Holiday Peanut Butter Cutouts
Ingredients:
- 1/2 cup creamy peanut butter (i only had chunky)
- 1/2 cup I can’t believe it’s not butter (i only had the tub)
- 1/2 cup firmly packed brown sugar
- 1/2 cup sugar
- 1 egg
- 1/2 tsp vanilla
- 1 3/4 cups flour
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
Preparation:
Beat peanut butter, i can’t believe it’s not butter, sugars, egg and vanilla in a large bowl until smooth. Beat in remaining ingredients at low speed, just until blended. Divide dough in half.
Roll each dough half about 1/8 inch thick on a well-floured board with a well-floured rolling pin.
Preheat oven to 375. Cut dough into shapes with cookie cutters. Arrange on cookie sheet with a silpat
Bake 7-9 minutes or until lightly golden. Cool completely on wire racks. Re-roll dough trimmings to cut additional cookies.
All in all the cookies were ok, but rolling them out was tough, and the cookie cutters need to be pretty small to get the amount of cookies described and to be able to move them from the cutting surface to the sheet without they loosing shape.
Not a recipe i’ll be trying again!
