Today is the pup’s second birthday! I can’t believe it, they are growing up so fast!
I decided to make them a puppy cake – that’ll be the next post!
But one of the main ingredients in the cake was a cup of shredded carrots…. Not sure what i was thinking but i ended up shredding probably 3-4 cups of baby carrots! So… what does one do when they have too many carrots and the oven is already on… I took the original recipe i started with for making cookies for the pups and replaced the cranberries with carrots and whala!
Ingredients:
- 2 1/2 cup whole wheat flour
- 1/2 cup dry milk powder
- 1 cup shredded carrots
- 1 egg – beaten
- 2/3 cup to 1 cup water
Preparation
1. Preheat oven to 350. In a large bowl, stir together all the ingredients and 2/3 cup water, adding more water as needed if the dough is too stuff (i’d use my kitchenaid mixer next time, stiring with a spoon is a pain!)
2. Instead of cutting out the cookies i picked up a trick from mom – take the ball of dough, put it on silpat, roll it out to the 1/4 inch, and using a pizza cutter – cut it into desired size pieces! Put the whole cookie sheet in the oven, bake until crisp 40 minutes. Transfer to a rack to cool, break them into their pieces before they get too hard!
The boys gobble them up as well as helping to clean the bowl!
My dog does NOT like the texture of raw carrots but I wonder whether she’d like them more in grated, cookie form!
