Egg Cups

Hubby has been doing the 4 hour body and was starting to get tired of plain old scrambled eggs!

I saw this the other day on Spark People and we tried it today!

Baked Egg Cups

adapted from Spark Recipes – Baked Egg Cups

Ingredients:

  • 5 slices of deli ham (or 1 package ham from bendig or whatnot – 10 slices)
  • 2 eggs,
  • 3 egg whites
  • 1 jalapeno chopped
  • 1 tablespoon chopped pepper
  • cheese for top of each muffin
  • salt and pepper to taste, cooking spray

Directions:

Preheat oven to 350. Spray 6 cups of a muffin tin with cooking spray. Arrange ham slices so they line the muffin cup completely, edges will stick up above the cup. Bake for 10 minutes.  (not so easy with the cheap ham, don’t worry about them coming over the top) Remove from oven

While ham cooks – Combine eggs, egg white, jalapeno, peppers and salt and pepper in a bowl.Set aside

Pour egg mixture into each cup

Return to oven for 10 minutes.

Sprinkle egg over the tops

Cook for 5-10 more minutes.
Serve immediately. Makes 5 servings

Hubby liked these quite a bit, but the time required to get the ham done and then the cups themselves, make them not an quick breakfast meal. Might work on ham during shower, egg after i get home… who knows.

    They’d make a terrific brunch item…might just try that.
    Is the ham paper thin slices or…..do you need fat ones?
    Cheese..flavor? shredded or sliced?

  2. Thin is better, then you get crispy where it flows over the top of the cut!
    Cheese flavor is whatever you want – we have bags of shredded and i think this one was nacho or mexican blend.
