Crockpot Thai Chicken

I’ve made this a couple time and i just love it! Hubby thinks it needs more sauce, i think it’s ok! I love how easy it is, how tasty it is, and how yummy it comes out!  Stick to the time frame, longer and it dries out.

Ingredients:

2 chicken breasts 3/4 cup salsa 1 serrano chili  (or 2 jalapenos) – diced 1/4 cup chunky peanut butter 1 tablespoon fish sauce 1 teaspoon grated fresh ginger root

Preparation:

1. Place chicken in bottom of 4 quart crockpot 2. Mix remaining ingredients, pour over chicken 3. Cover and cook on low for 8-9 hours.

Thai food in general makes me seriously happy and the fact that i could be at school all day and come home to this! Awesome.
