So, i love me lentils and beans etc. Hubby can take or leave them. Although he does love Dal or daahl or however you want to spell or say it.
I’ve had a number of recipes set aside to try them – at some point…
Well, the newest craze to hit the boy diet market is out and has hubby by the belly!
So “no more white food” is residing within the wilker household now. (fine by me, i only bought the 25 pound bag of rice for hubby anyway… anyone need to dry out a cell phone or feed a small country? i got you covered!)
That means the Dal recipes are coming out for trial!
This once had been made twice! Once without the cumin seeds, the second time with. We like it better without the cumin seeds and just adding straight up cumin powder! As usual I doctored the recipe and like it alot!
Ingredients
- 1 tablespoon olive oil
1 1/2 teaspoons cumin seeds (or 1/2 tsp cumin powder)
1 teaspoon yellow mustard seeds
1 cup chopped onion
2 teaspoons bottled minced garlic
1/2 teaspoon crushed red pepper (i used 1 tsp – well i just shook the bottle till it looked right!)
1/4 teaspoon ground turmeric
1/4 teaspoon bottled ground fresh ginger
1/2 serrano chili – diced (my addition)
3 cups chicken broth (recipe called for veg broth, i hate how it smells and tastes)
1 1/4 cups dried lentils
1 cup water
Directions
Prep – the first time we didn’t soak the lentils, the second time we did. I didn’t notice much of a diff…
Heat oil/cooking spray in a large saucepan over medium-high heat.
Add cumin and mustard seeds; cook 2 minutes or until toasted, stirring frequently.
Stir in onion, garlic, red pepper, turmeric, serrano and ginger; cook 1 minute, stirring constantly.
Stir in broth, lentils, and 1 cup water; bring to a boil. Cover, reduce heat, and simmer 30 minutes or until lentils are very tender, stirring occasionally.
Uncover and simmer 20 minutes or until thick and creamy, stirring occasionally with a whisk.
