Hot and Sweet Broccoli and Asparagus
I found this recipe in a booklet I got when I purchased local honey for hubby’s allergies.
I updated heat factor for my liking! I would also microwave all the veggies prior to cooking so there was no steaming in the same pot as the glaze. Great flavor!
1/4 cup honey
1 teaspoon ground ginger (I used minced)
1 tablespoon crushed red pepper
1 pound broccoli, trimmed
1/2 pound asparagus, trimmed
2 tablespoons hot chili olive oil
Combine honey, soy sauce, ginger and red pepper
Cut up broccoli and slice stem. Diagonally slice asparagus.
Heat oil in large skilled, add broccoli and asparagus and stir-fry over medium-high heat for 3 minutes. Add 1/2 cup water to pan. Cover and steam vegetables for 2-5 minutes or until tender-crisp. (I didn’t like the crispness, I cooked it much longer!) Drain water from pan. Add money mixture and cook uncovered until glaze is slightly thickened, about 2 minutes.
Makes 4 servings.
