Hubby was out of town and I was in the mood for cake. Well really I was in the mood for frosting! There were no cakes mixes in the house. I contemplated just opening a can of frosting and going to town – but I had flash backs to a ski trip in highschool where too much frosting and cheddar cheese Pringles made for a very upset tummy!
So I decided to flip thru my Cooking Light Binder and found this little tid bit. I love my score bars – and have them in the “baking” box so I don’t eat them outright, so this sounded yummy! I used my kitchenaid to break up the candy bars into bits! And the idea of 12 servings – bah! More like 8!
Toffee Blond Brownies
Ingredients
1 cup packed brown sugar
1/4 cup butter, melted
1/4 cup egg substitute
2 teaspoons vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
Cooking spray
1/4 cup toffee baking bits (such as Heath)
Preparation
Preheat oven to 350°.
Combine first 4 ingredients in a large bowl; stir with a whisk. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, baking powder, and salt. Add flour mixture to sugar mixture; stir just until moist. Spread batter in an 8-inch square baking pan coated with cooking spray. Sprinkle with toffee bits. Bake at 350° for 22 minutes or until a wooden pick inserted in center comes out almost clean. Cool in pan on a wire rack.
Note: Store, covered, for up to 3 days.

All in all it was pretty tasty treat. Not sure it will survive to get into my "make again cooking light binder" – yes i have 2 binders!
But it is fast and easy for anyone needing a quick desert!
But the real fun of the evening was my LA Ink marathon I had! (I love my Tivo) Dang if that show is not a train wreck! I just always have to see what is going to happen next! Don’t worry mom, i don’t want a Tattoo, but all the drama and crazy stuff people come in to have done! Oh my!
